I’m Cori!
First off I would just like to make note of how incredibly difficult it was for me to find a picture of myself! I am sure all of you moms out there can relate, we are always the picture takers, never in the pictures. But this picture was taken about a year ago close to my mom’s birthday. She loves Angel Food Cake and no one usually makes one for her because they are so dang hard to get right. I have tried multiple times in the past, but something always happens to it. I think one year I literally gave her half a cake and the other half was in crumbs and pieces (it fell out of the pan). So the reason my husband took this picture of me is because LOOK AT THAT CAKE! Isn’t it beautiful? I was very proud of myself that day! haha
Now that you have shared in my Angel Food Cake joy. Let me share more relevant info:
I am a full-time online entrepreneur for about 10 years now, but more importantly, and probably what led to our paths crossing today is I have been a stay-at-home mom now for 15 years and I am super efficient when it comes to feeding my family! We eat at home most nights with myself being the main planner and cook. After 15 years as you can imagine, I have made food for all different stages and milestones of life.
My current stage of life is that I have 3 kids, the oldest in high school (not yet driving age and I hear that is life-changing when that happens), middle in middle school, and the youngest in elementary school. So yes I have a three-school drop-off and pick-up routine every morning and afternoon! And all three play sports most days after school. So if I don’t have a plan, for anything really, but especially dinner, it is simply not going to happen (and therefore eating out more than my wallet can handle) or it will be “tacos again” as heard from my kids in their most annoyed voices.
I have been through many of the ups, downs, and struggles of providing every basic need for the family PLUS all the extras of being the taxi service, the school project engineer, the nightly entertainment, and the list goes on and on. So if you feel that you are drowning at times, I see you.
This is why it is so important for me to do what I am doing because I really want to give all moms and primary caregivers a little help where I can. And where I can do that is by helping you to be more organized in the kitchen and with meal planning so that you will always have an answer and a plan to the question “What’s for dinner?
This is a glimpse at my calendar during basketball season and this is about par for the course during January. And yes I am bat-shit crazy when the season finally comes to an end in late Febuary/early March.
